Bendekai or Okra is a nutritious vegetable that is rich in fiber, folate, antioxidants, and vitamins. It can be a great food option for diabetics. Okra with yogurt is a soothing combination for the stomach also. Bendekai hashi is an authentic recipe that is served with rice as you begin your meal. Here is a simple recipe -
Ingredients
- Bendekai/Okra - 8 to 10 nos
- Green chilies - 2
- Oil - 2 tbsp
- Freshly grated coconut - 3 to 4 tbsp
- Whisked curd/ buttermilk - 1 cup
- Salt as per taste
- Jaggery (optional)
For seasoning
- Urad dal - 1/2 tbsp
- Mustard seeds -1/2 tbsp
- Curry leaves - 4 to 5
- Dried red chiles - 1 or 2
- Oil - 2 tbsp
- Pinch of asafoetida
Method
- Fry chopped bendekai and green chilies in water and let it cool
- Grind freshly grated coconut in a mixer grinder and add the mixture to fried bendekai and chilies.
- Add a cup of whisked curd and salt. Mix well. Add a little water.
- Season it with mustard seeds, urad dal, curry leaves, asafoetida, and red chilies
- Mix well and serve the bendekai hashi with hot rice!
