Ambe Kombu (Curcuma amada) Tambuli #Mango Ginger recipes

Mango ginger (Ambe kombu) is a unique herb or a root that looks similar to ginger but gives a taste of unripe mango when crushed. It holds a lot of importance in Ayurveda and the Unani system of medication as antipyretic, aphrodisiac, appetizer, expectorant, laxative and to cure asthma, bronchitis and skin diseases and many. Western ghat regions being the treasure troves of many such edible roots and tubers, became an essential ingredient of the food system. Try this delicious and healthy mango ginger tambuli!



Ingredients

  • Mango ginger (Ambe kombu) - 3 inches (peeled and crushed)
  • Freshly grated coconut - 3 to 4 tbsp
  • Green chilli - 1 to 2 as per taste
  • Buttermilk - 2 cups
  • Salt as per taste
  • Water for grinding

Seasoning

  • Ghee -1/2 tbsp
  • Mustard seeds - 1/2 tbsp
  • Pinch of asafoetida
  • Red chillies - 1 to 2
  • Curry leaves - 5 to 6

Method

  1. Grind crushed mango ginger, grated coconut, and green chillies together with a little water in a mixer grinder
  2. Strain the grounded mixture and add buttermilk to the strained juice
  3. Add salt as per taste and mix well
  4. Season it with curry leaves, red chillies, mustard seed, and asafoetida 
  5. Mix well after tempering and serve it with cooked rice!
