Sambar is a must in the daily menu of havyakas as we are rice eaters. A typical havyaka style sambar is made without using onion and garlic, but with freshly roasted spices and coconut as masala. Here is a simple havyaka style sambar recipe which is a delicious combo with hot rice/idli/dosa.
Ingredients
- Toor dal - 1 cup
- Potato - 1
- Drumstick - 2 (any vegetables can be used)
- Turmeric powder - 1/2 tbsp
- Jaggery - small sized
- Salt as per taste
For masala
- Freshly grated coconut - 1/2 cup
- Red chili - 3 to 4 (Byadagi chili)
- Oil - 2 tbsp
- Chana dal - 1 tbsp
- Urad dal - 1 tbsp
- Fenugreek seeds - 1/4 tbsp
- Mustard seeds - 1/4 tbsp
- Coriander seeds - 2 tbsp
- Cumin seeds - 1 tbsp
- Asafoetida - 1/4 tbsp
- Tamarind - small lemon sized
- Curry leaves - 5 to 6
For seasoning
- Oil - 1 tbsp
- Mustard seeds - 1/4 tbsp
- Red chili - 2
- Asafoetida - 1/4 tbsp
- curry leaves - 4 to 5
Method
- Pressure cook washed toor dal by adding turmeric. 3 whistles are enough!
- Cook potato and drumstick separately.
- Roast all the spices with coconut, turmeric, and curry leaves in the oil.
- Grind them in a mixer grinder by adding little water and make it a paste.
- Add the masala paste to cooked vegetables.
- Smash the cooked dal and add it to the vegetable mixture.
- Add sufficient water, salt, jaggery as per taste and give it a proper stir.
- Let it boil on medium flame.
- Switch off the flame and season it! you can now enjoy the hot rice with ghee and sambar!
