Jackfruit is a tropical fruit that comes with various nutritional benefits. There are various delicious recipes made out of tender jackfruit to riped jackfruit. Jackfruit seeds are also extremely useful and highly nutritious. Jackfruit seeds are protein-rich and are loaded with plenty of micronutrients. The richness of iron in the seeds helps to combat anemia. It is even good for skin, hair, and eye health. In coastal areas when we eat jackfruit, we wash the seeds and keep them aside to dry. After 3 to 4 days, seeds that are dried can be used to make delicious recipes like obbattu, payasam, and rasam, etc. Don't store broken seeds. Here are a simple jackfruit seeds rasam recipe

Ingredients

  • Jackfruit seeds - 10 to 12 
  • Freshly grated coconut - 1/2 cup
  • Ginger - 1/2 inch
  • Green chili - 2 
  • Tamarind - small lemon sized
  • Jaggery - small size piece
  • Rasam powder - 1 1/2 tbsp 
  • Coriander leaves 
  • Salt as per taste

For seasoning

  • Ghee - 2 tbsp
  • Mustard -1/2 tbsp
  • Jeera - 1/2 tbsp
  • Pinch of turmeric
  • Pinch of asafoetida
  • Curry leaves - 6-7
  • Red chili - 2

Method

  1. Wash the jackfruit seeds, add the water and pressure cook them ( 4-5 whistles is enough). Take out the outer cover from seeds.
  2. Grind the cooked seeds in a mixer grinder by adding little water.
  3. Transfer the mixture to Kadai/vessel for making rasam. 
  4. Add water to the mixture and keep it for boiling
  5. Add soaked tamarind paste/water, jaggery, rasam powder, and salt. 
  6. Stir it well and bring it to boil.
  7. Grind the coconut, green chili and ginger in a mixer grinder and strain the mixture
  8. Add the coconut chili-ginger strained milk to the boiling rasam
  9. Let it boil for a minute
  10. Add coriander leaves and switch off the flame
  11. Season it with mustard, jeera, turmeric, asafoetida, curry leaves and red chili in ghee
  12. Jackfruit seeds rasam is ready! Relish this authentic and delicious recipe with hot rice!
