Ridge gourd is rich in dietary fibers with low calories. This vegetable is loaded with zinc, iron, vitamin C, and many. Every part of this vegetable is nutritious. Usually, while cooking curries, crisp peel of ridge gourd goes in for waste. But its extremely rich in dietary fibers which can be used to make delicious chutney. Here is a recipe of heerekai sippe gojju/ ridge gourd peel chutney -

Ingredients

  • Ridge gourd peel - 1 cup
  • Oil - 2 tbsp
  • Chana dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Turmeric - 1/4 tbsp
  • Sesame seeds - 1 and a half tbsp
  • Fresh coconut - 2 to 3 tbsp
  • Green chili - 2
  • Tamarind - 1/2 lemon sized
  • salt for taste

Seasoning

  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tbsp
  • Curry leaves - 3 to 4
  • Asafatieda - 1/4 tbsp

Method

  1. Fry all the ingredients in oil
  2. Grind all the fried ingredients by adding salt and little water
  3. Transfer the grounded mixture to a serving bowl. 
  4. Season it with mustard, curry leaves, and asafoetida
  5. Delicious and spicy heerekai gojju can be served with chapatis/ dosa
