Tender snake gourd seeds are also high in nutritional value. Snake gourd seeds tambuli is a healthy recipe that can be included in your fiber diet. Here is a simple tambuli recipe -

Ingredients

  • Tender snake gourd seeds - 1/2 cup
  • Green chili - 1
  • Asafetida - 1/4 tbsp
  • Freshly grated coconut - 4 to 5 tbsp
  • Buttermilk/whisked curd - 1 cup
  • Salt as per taste

For seasoning

  • Red chili - 1
  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tbsp
  • curry leaves - 4 to 5
  • Pinch of asafetida

Method

  1. Cook tender snake gourd seeds in water with green chili and asafetida 
  2. Grind the cooked seeds with coconut in a mixer grinder
  3. Strain the mixture and add buttermilk/whisked curd
  4. Add salt and mix well
  5. Season it with mustard seeds, red chili, curry leaves, and asafetida.
  6. Delicious tambuli is ready! you can serve it with rice
