Mango Seekarane/Mango Rasayana #Mango recipes


Mango, the king of fruit is loved by almost everyone. Summer being the season of mangoes, weddings, and other functions, mango recipes are quite common across India in functions and in every household. For me, summer vacation is the most favorite time of the year as it was always spent in granny's place with various yummy recipes of grandma. Mango seekarane is one such dessert/side dish that is relished every day during summer. Mango has various health benefits as it is rich in vitamin C, B, high fiber content, and many more.

Here is a simple recipe of mango seekarane

Ingredients
  • Riped mangoes (Alphanzo/Badami) - 2 
  • Freshly grated coconut - 1 cup
  • Jaggery - 1/4 or 1/2 cups (depending on sweetness of mangoes)
  • Cardomom powder - 1/2 tbsp
  • Water for grinding
  • Pinch of salt
Method
  1. Wash and peel the skin of riped mangoes. 
  2. Chop the peeled mangoes into small pieces. 
  3. Grind coconut and cardamom powder with a little water in a mixer grinder. 
  4. Strain and take out the coconut milk. 
  5. Add coconut milk to the chopped mango mixture
  6. Add jaggery, a pinch of salt, and mix well.
  7. Tasty and delicious mango seekarane is ready to serve. You can relish it with neer dose/chapati.
